Kimchi

Dear Kim Chi, Where were you all my life? It has become a new favorite.

Starting a new batch. I love the colors! This time I used a Hunan chile-garlic paste instead of dried hot red peppers. Last time I kept adding more peppers trying to get the red color. It turned out way too hot to eat by itself. We ended up making pancakes with it, with flour and egg, sort of like fritters or egg fu yung patties. This batch tastes pretty good so far.
